Healthy Seed Crackers (GF)

This recipe is a real staple in my pantry. A healthy alternative to processed crackers packed with omega-3 and omega-6 fatty acids, protein, fiber, antioxidants, zinc, lignans, calcium, and vitamin E and healthy fats. Add any seeds you may already have or like. This recipe is really forgiving and can be modified to your hearts content.

Ingredients:

  • 1 cup of gluten free oats

  • ¼ cup of flax seeds

  • ¼ cup of chia seeds

  • ¼ cup of sesame seeds

  • ¼ cup ground flax seeds

  • ¼ cup pumpkin seeds

  • ¼ sunflower seeds

  • ¼ tablespoon of sesame seed oil

  • warm water

  • salt to taste

Instructions:

Preheat the oven to 350 degrees. Line a baking sheet with parchment paper. Pulse the oat in a food processor around 10 times. The goal is to make the oats smaller, but not into flour. Add all the dry ingredients into a bowl and mix. Add the sesame seed oil. Add enough water to make a thick pasty mixture around ½ -1 cup depending on seeds. Spread the mixture thinly onto a baking sheet. At this point, I recommend adding a second layer of parchment paper and using a rolling pin to spread the mixture. Bake for approximately 1 hour or until it starts to brown around the edges and is no longer soft in the center. Remove from oven and cool for approximately 15 minutes. break into pieces. Store in airtight container for up to 1 week.
